This might seem like a fall recipe but anything goes during quarantine and it’s still cold here in Chicago.... so who cares!? I’m just getting creative with whatever I have in the house these days and I know soups are a great way to use up veggies in my fridge.

Soups are similar to smoothies for me... they’re a great way to get fruits and veggies in without it seeming like a huge chore and I love playing around with flavors and different combos. If you know me and my food philosophy, you know that I’m all about focusing on adding things in my daily meals first instead of focusing on cutting things out. When we add more and more of the good in, it’s easier to let go of the bad.

Easy Apple Cinnamon Squash Soup Recipe

Here’s how I made this cinnamon squash soup:

  1. I put about 6 cups of diced butternut squash (I bought pre-cut squash) with two small chopped yellow onions and about 5 small apples sliced without skin on 2 sheet pans

  2. I drizzled avocado oil over everything and sprinkled it all with cinnamon

  3. I then roasted everything in the oven at 400 degrees for about 10-15 minutes (just make sure the squash is soft before you blend)

  4. I placed the contents of one sheet pan into blender (vented), added an avocado, a scoop of collagen, and half a quart of chicken broth and blended until smooth.

  5. I poured everything back on the stove in a pot and repeated everything with the other sheet pan.

  6. Once everything was blended together and back on the stove, I simmered it all and added more cinnamon, and salt and pepper to taste.

You can top the soup with a few slices of apples, or seeds or nuts of your choice and devour it up!! You can make a large batch to enjoy all week. I love to store all of my leftover soups in mason jars for the week — they can store easily in the fridge or I can freeze them up to enjoy later. What are you cooking up these days??
